Welcome, Pamela. Please tell us a little bit about yourself.
Hello! My name is Pamela Vivian and I am the author of the cookbook Low Sodium Cooking from the Heart. I was diagnosed with an illness in 2017 and instructed to go on a low-sodium diet. Cooking and baking have always been a couple of my favourite pastimes, so I decided to write a cookbook to help other people who also need to be on this type of diet. It is a good basic cookbook that anyone can use that does not require the entire grocery store to use. I met lots of interesting people on my journey of writing the cookbook from across the country.
Please tell us a bit about your new release.
Low-Sodium Cooking includes family favourites. I have tried to include interesting little bits of the history of recipes or whose favourite it is. The book contains recipes from basic daily meals to a few gourmet ones.
Excerpt from Low-Sodium Cooking from the Heart:
This is the most requested menu item by my grandchildren when coming over. We gather and freeze strawberries when in season so they can have it all year round.
Serves 8
2 cups strawberries
1 cup apple juice
2/3 cup sugar
1 cup water – divided
1/2 tsp cinnamon
1/8 tsp cloves
16 oz strawberry yogurt
In a saucepan, combine apple juice, 3/4 cup water and spices. Bring to a boil. Cool. In a blender, puree strawberries and 1/4 cup water. Stir cooled apple juice mixture, strawberry mixture and yogurt until well blended. Chill and serve.
What exciting project are you working on next?
The process of writing the cookbook has been fun for my family…what should be included and why some of their favourites could not be in the book. It was exciting to see them with a newly printed copy looking for their favourite recipe in the cookbook. My youngest grandson will tell you Mac n cheese on page 38.
Now they are bugging me to do another with the rest of the family favourites in it. When writing the book, I was always cooking or baking and it was way more than we could eat so I am very popular in the neighbourhood due to food sharing.
